The shelves are now gradually being filled with all the treats that Christmas has to offer. You can already buy the award-winning mulled wine (glögg) from Hallongården. A tip for a really good, autumnal Christmas breakfast with the flavours of the season is a saffron pancake, best served of course with a genuine cloudberry jam from Österlenkryddor.
Here is a recipe from Österlenkryddor (https://www.osterlenkryddor.se). Set the oven to 175 degrees and let 1 gram of saffron steep in a little cognac for three hours. Mix the saffron mixture with 3 eggs, 1 litre of rice pudding and 1 dl chopped almonds in a bowl. Pour the batter into a greased ovenproof dish and bake for 45-55 min.
For a really good result, we recommend using a higher quality saffron with whole threads. It will of course be best if you cook your own rice pudding using full-fat milk.
